Every October a bakery is asked for something that looks like Halloween. The trap is that most of it arrives as colouring — and a seasonal item built on colouring has to be re-declared, re-labelled and defended to any buyer with a clean-label policy.
This line takes the other route. The green comes from pistachio, the black comes from the bake, and the texture comes from kunafa shreds. Three Nutoast products carry the whole set.

The three products behind it
Nothing in this line needs a fourth ingredient to look seasonal. Each product does one job, and the job is the reason it is in the recipe.
01Pistachio Butter · X — the colour and the body
A heavy-roast, high-oil paste built for the oven: freeze-and-bake stable, and it holds its aroma through a hot Basque bake rather than flattening out. It is what turns shortbread dough and cheesecake batter green without a drop of colouring — which is the difference between a seasonal item you can sell to a clean-label buyer and one you cannot.

02Pistachio Kunafa Filling — the crunch
Coarse, heavy-roast, bake- and freeze-resistant. This is the part that reads as Halloween at arm’s length: the shreds are what makes a cookie look like something crawled out of the ground. The production question is not flavour but whether the crunch survives the counter — a shred that goes soft by mid-afternoon takes the whole gag with it.

03Pistachio Sauce — the drinks side
Beverage-dedicated, 42–52% oil, maximum fineness. It dissolves fast and disperses cleanly, which is what a layered drink needs: the Witch’s Cauldron only works if the green base stays green instead of separating into a ring at the bottom of the cup.

Two applications, produced and photographed

Witch Finger Cookies
A pistachio shortbread finger, an almond pressed in for the nail, two knuckle lines scored before the bake. The break at the end is deliberate: it is where the kunafa shreds go, so the crunch lands at the first bite rather than being scattered decoration.


Little Monster Basque
A pistachio Basque baked hot and fast so the top caramelises to near-black, then glazed green and crowded with piped faces in Oreo witch hats. The two colours are the bake and the paste — there is nothing else in it doing the Halloween work.


Both were plated together as a counter display — the fingers stand in the glaze, so one bake covers a cabinet piece and a grab-and-go item at the same time.
